For the cake:
1½ cups white sugar
2 cups flour
2 tsp. baking soda
1 can #303 or 2 cups fruit cocktail with juice
For the icing:
½ stick butter
½ cup of evaporated milk
¾ cup 10x or confectioners’ sugar
1 can or bag of coconut
Preheat oven to 350 degrees. Mix flour, sugar, and baking soda together. Add eggs, then fruit cocktail. Pour in ungreased 13 x 9 pan and bake for 40 minutes.
Combine butter, evaporated milk, and sugar in a pan on the stove and bring to a boil for one minute. Add coconut. Pour/spread over slightly cooled cake. Icing will melt and cover cake.
