Lemon Ice

1/2 tsp. lemon zest
1 cup sugar 
2 cups water
juice of 1 lemon

Combine the zest, sugar, and water in a medium-size saucepan and bring to a boil over high heat, stirring constantly. Reduce heat to medium-low and simmer a few minutes. Remove from heat and let cool. Stir in the lemon juice, cover and refrigerate until well chilled. Freeze in ice cream maker and enjoy.
