Pasta Maria

(aka, Pasta Caprese, Pasta Margherita, and Pasta Fresca)

Cook up a pound of your favorite pasta until al dente, then drain.

Toss with:

3/4 pound fresh mozzarella cheese, diced

2 whole tomatoes, diced

a good handful fresh basil leaves, chiffonade

1/4 cup extra virgin olive oil

3 tablespoons Italian dressing (I suggest “Ken’s")

Serve immediately.
