2-1/2 to 3 lbs. Italian sausage links
4 green peppers, cleaned and cut into large pieces
3 medium yellow onions, peeled and quartered
1 (28-oz.) can crushed tomatoes
salt and pepper
dried garlic flakes
Place sausage in a large baking pan. Pierce sausage and bake in a preheated 350-degree oven for approximately 20 minutes, until firm. Add peppers and onions to the pan. Bake another 15 minutes.
Add tomatoes and season with a sprinkling of salt, pepper, parsley, garlic, and oregano. Bake 5-10 minutes more, then move to a crock pot to simmer for at least one hour before serving. Will also keep well in a warm crock pot for several hours.
