Mom's Tomato Sauce

1 lb. meat of your choosing (chopped beef, meatballs, sausage, meatloaf mix, pork chops,
     boneless pork, or veal all work well)
2 T. oil (if you are making a meatless sauce)
2 cloves garlic, minced
7 cups pureed plum tomatoes
1 T. tomato paste (optional, for added flavor or to thicken)
1 1/2 T. dried parsley
1 tsp. dried oregano
1 1/2 T. dried basil
1 1/2 T. dried onions
1/2 tsp. dried crushed red pepper (optional)
2 tsp. salt
1 tsp. black pepper

Brown meat in bottom of pan, then add in garlic. If you are making a meatless sauce, slightly saute the garlic in the oil. Add all the remaining ingredients, and simmer uncovered for hours. If the sauce thickens too much, add a little water to thin out. Periodically taste-test; add salt as needed. Serve over your favorite cooked pasta or use as an ingredient in your favorite Italian dish
